Mint and Cucumber Refresher Recipe

Put this top of the list when you next go on a diet- it’s the perfect booster.

Mint and Cucumber RefresherINGREDIENT:

Few sprigs mint

1 tsp caster sugar

Juice 1 lime

1in/2cm piece cucumber, thinly sliced

Your favorite sparkling water, chilled, to taste

METHOD:

1. Chop a few mint leaves and mix with sugar.

2. Rub a little lime juice round the rim of a pretty glass and dip in the minted sugar. Leave to dry.

3. Mix the rest of the lime juice, cucumber and mint – some chopped and some whole – in a jug and chill.

4. To serve, pour lime and cucumber into the prepared glass and top up with chilled water to taste.
